Soy Sauce Soft Serve at Marukin Soy Sauce Museum, Shodoshima: Worth the Detour

If you’re visiting Shodoshima — a small island in the Seto Inland Sea known for its olive groves and laid-back island vibes — soy sauce is kind of unavoidable. The island is one of Japan’s top soy sauce producing regions, and you can literally smell it in the air as you drive around. Right at the heart of that tradition is the Marukin Soy Sauce Museum, one of the most well-known spots on the island.

We stopped by with my French Bulldog Elmo on a recent trip. Dogs aren’t allowed inside the museum itself, so my wife and I took turns — one of us stayed outside with Elmo while the other went in. I didn’t get to explore the exhibits properly this time, but honestly, I had one clear goal: the soy sauce soft serve ice cream.

What is the Marukin Soy Sauce Museum?

The museum is housed in a historic soy sauce brewery that’s been designated as a Registered Tangible Cultural Property — basically, it’s an old building with real historical value that’s been preserved and opened to the public. Inside, you can see the brewing process, traditional tools, and giant wooden fermentation barrels that have been used since the Meiji era (late 1800s). It gives you a real sense of what soy sauce production looked like before everything went industrial.

That said, plenty of people — us included — show up mainly for the gift shop and the soft serve. No shame in that.

The soy sauce soft serve — does it actually taste good?

I went in first while my wife held Elmo outside, grabbed the soft serve, and came back so she could take her turn. Simple system, it works.

So — the soft serve. I’ll be honest, I wasn’t totally sure what to expect. “Soy sauce flavored ice cream” sounds like it could go either way. But it was genuinely good. The soy sauce flavor isn’t overpowering at all — it’s more like a savory, slightly smoky note that cuts through the sweetness of the vanilla base. That sweet-salty combination is kind of addictive, and the finish is surprisingly clean.

It looks like a totally normal soft serve cone. Then you take a bite and there’s this moment of “oh wait, that’s the soy sauce” — but in a good way. It’s subtle enough that it doesn’t feel gimmicky, but distinct enough that it actually tastes like something specific to this place. If you’re on Shodoshima, it’s worth trying just for that experience.

I didn’t get to see the inside of the museum properly this time, but I’d genuinely like to come back and do the full tour. The old brewery aesthetic, the giant fermentation barrels, the history of it all — I want to take that in properly. Next time, either without Elmo or with someone to watch him while I look around.

The good and the not-so-good

What worked well

The soft serve is quick, affordable, and a perfect little stop during a day of sightseeing. The gift shop is solid too — great for picking up soy sauce-based souvenirs. Even just from the outside, the old brewery buildings have a lot of character and feel very Shodoshima.

Things to keep in mind if you’re bringing your dog

Dogs can’t go inside, so you’ll need to do the tag-team thing if you’re visiting as a couple or group. It’s not a big deal — the parking lot is right there and the museum entrance is close, so swapping in and out is easy enough. If it’s summer, just be mindful of the heat. Don’t leave your dog in a parked car — keep the visits short and stay in the shade.

Quick summary

We couldn’t do the full museum experience this time around, but the soy sauce soft serve alone made the stop worthwhile. It’s a genuinely interesting flavor — savory, sweet, a little smoky — and it’s one of those things that feels right at home on Shodoshima. The museum itself looks like a great visit for anyone into history or food culture, and I’m already thinking about coming back to actually see it properly.
